Well another super easy dish this week that won’t break the budget. It’s from the Italian section of Delicious – Love To Eat so as you can imagine it is packed full of flavour. Loads of garlic, passata, herbs, capsicum and chilli make for a fabulous one-pot dinner. The recipe suggests serving it with polenta, however, I chose to serve it with a beautiful creamy mash. So given that the cooking of this is easy and there is really not anything I can tell you other than just cook it, you won’t regret it, I wanted to share an idea I had for this dish after I’d consumed it with the family.

Roman Chicken with Creamy Mash
Chicken thigh fillets are browned in a large pot, then set aside while garlic, red capsicum and a sliced long red chilli soften. Everything goes back in with bottled passata, dried oregano and thyme, and simmers gently until the chicken is tender and the sauce has thickened. Meanwhile potatoes are boiled and mashed with butter and milk until creamy, ready to soak it all up. It is an easy, one-pot Italian dinner that suits a weeknight. The chicken can also be shredded, returned to the sauce and tossed through al dente spaghetti if you would rather serve it as pasta.

- Heat oil in a large pot and brown chicken thighs on both sides. Remove and set aside.
- Add garlic, capsicum and chilli to the pot and cook for 2–3 minutes.
- Return chicken to the pot, add passata, oregano and thyme, and season. Cover and simmer for 25–30 minutes until chicken is tender.
- Meanwhile, boil potatoes until soft, drain, and mash with butter and milk until creamy.
- Serve chicken and sauce over the mash.
Notes
Rated 9/10. Variation: shred cooked chicken, return to sauce, mix with cooked al dente spaghetti and serve as "Roman Chicken (Spaghetti)" instead of with mash or polenta.

Mango & Coconut Slice
A set-and-forget dessert that firms up overnight in the fridge. The base is rolled oats, desiccated coconut, honey and melted butter, pressed into a lined tin and baked briefly until golden, then cooled completely. Slices of ripe mango are arranged over the top and covered with a coconut milk mixture sweetened with caster sugar and set with gelatine. Left overnight, it firms into neat slices that cut cleanly. The flavour is mild and not overly sweet, which makes it feel light after a big meal, and the mango does most of the work.

- Preheat oven to 160°C. Combine oats, coconut, honey and melted butter, press into a lined slice tin and bake for 10 minutes until golden. Cool completely.
- Sprinkle gelatine over water and let it bloom.
- Heat coconut milk and sugar in a saucepan until sugar dissolves, then stir in the bloomed gelatine until fully dissolved.
- Arrange mango slices over the oat base, pour the coconut mixture over the top, and refrigerate overnight until set.

Mild in flavour, not overly sweet. Rated 9/10.

I had comments like, healthy, non-fattening, light etc. etc (non-fattening is a bit of a stretch I think). Mangoes are of course always a winner for dessert. Another 9/10 score.
