Mango & Coconut Slice

Delicious – At Our Table
Mild-flavoured, make-ahead mango dessert with a bland oat base and a layer of coconut milk "jelly" instead of cream, ice-cream or custard — a reasonably healthy dessert for a change.

Ingredients
  

  • 1.5 cups rolled oats
  • 1/2 cup desiccated coconut
  • 1/3 cup honey
  • 60 g butter melted
  • 2 ripe mangoes sliced
  • 400 ml coconut milk
  • 1/3 cup caster sugar
  • 3 tsp gelatine powder
  • 1/4 cup water

Equipment

  • Slice tin, lined
  • Saucepan

Method
 

  1. Preheat oven to 160°C. Combine oats, coconut, honey and melted butter, press into a lined slice tin and bake for 10 minutes until golden. Cool completely.
  2. Sprinkle gelatine over water and let it bloom.
  3. Heat coconut milk and sugar in a saucepan until sugar dissolves, then stir in the bloomed gelatine until fully dissolved.
  4. Arrange mango slices over the oat base, pour the coconut mixture over the top, and refrigerate overnight until set.

Notes

Mild in flavour, not overly sweet. Rated 9/10.

Well let me tell you, the family loved it and so did all the people that scored the leftovers. I had comments like, healthy, non-fattening, light etc. etc (non-fattening is a bit of a stretch I think). Mangoes are of course always a winner for dessert. Another 9/10 score.
