French Onion & Beef Stew (with cheesy topping) & Date Cake

I have really been giving my slow cooker a beating lately.  From stews to soup it has served this family very well the past few very cold weeks.

This recipe appealed to me when I saw it in the Woolworths Magazine for several reasons.  Firstly, as cheaper cut of meat, which at the moment with the way groceries are going up in price, can only be good and secondly it is a set and forget meal.

So, with regard to the cooking, please take your time cooking down the onions.

There are 5 of them and it will be a slow and steady to get the best flavour out of them combined with the carrot, celery, bay leaves and thyme.  This part sets the “flavour scene” so to speak, for the rest of the stew.  Once all the other ingredients have been added, it is a 6 hour slow cook.

Holding back part of the onion mixture to top the bread is a nice touch, however, I found that the gruyere cheese was very expense so I bought a vintage cheddar which served the purpose beautifully.  The crunchy bread to dip into the stew is absolutely delightful.  Everyone enjoyed it and it received a 9/10.  Leftovers on toast the next day.

Ingredients
  

  • 1 onion
  • chopped
  • 1 clove garlic
  • crushed
  • 500 g minced beef
  • 4 slices cheese
  • 8 pieces bacon
  • lettuce
  • 1 tomato
  • sliced
  • 4 bread rolls
  • oven fries

Equipment

  • Patty Maker
  • Charcoal Grill
  • Deep Fryer

Method
 

  1. Fry the onion until golden brown.
  2. Add garlic to the pan and fry for another 30 seconds before removing from the heat.
  3. Mix the onions and garlic with the minced beef and divide into burger patties.
  4. Cook the burger patties to your preference, preferably on a barbecue.
  5. Put cheese on top of the burger patties for the last 30 seconds.
  6. Assemble the burger, serve with fries and enjoy!
