Hi Everyone!
Welcome back after the Xmas break. I hope you have stayed healthy during these unusual times.
Getting in a little practice in to be ready for Australia Day. I was absolutely blown away with the flavour of this traditionally humble fund-raiser fare. Not a lover of sausages? Well, neither am I until now. Of course, you need really good quality sausages to begin with and you are half way there. For those of you lucky enough to be living on the Northern Beaches of Sydney, the only place to get great meat is Devitts in Narrabeen. When I want something a bit special that’s where I go.
So, a couple of things that took these rolls to the “gourmet level” as the boys called them, was the beautiful, crunchy torpedo rolls which I toasted lightly on the BBQ and the mustard coating the inside of the rolls.
However, I also added tomato sauce AND mayo. Overkill you might say, well not in my house because everyone loves it. BUT the jewel in the crown is the beer-braised onions. I so wish I had made double because they would be sensational with cold meat whether it is chicken, ham or beef. I was also told that I didn’t do enough sausages. They had seconds for goodness sake, good grief. Anyway these received a 12/10 and yes they are a must do for Australia Day.
Now the lamingtons were a risk because I have never made them before and my Mum was the queen. All the grandchildren wanted her to make lamingtons for every birthday party and special occasion even when they were in the 20’s and 30’s. Mum recently passed away and I wanted to give them a go. I need practice son number 3 told me. And I will practice so that I live up to the standard but mine were perfectly acceptable and a lovely sweet treat after the rolls.
I’ve included my Mum’s recipe here. Mine didn’t seem to rise like hers but I have a feeling I over beat the butter and sugar a touch. Well, that’s what this blog is about. Learning on the job! 8/10 for these beauties and should definitely be included for Australia Day. My goodness, it’d be a sin not to.
These will be a regular at our house, give them a go you won’t be disappointed.
