Honey Sriracha Brisket Burgers

Tender, fall-apart brisket is flavoured with honey and Sriracha, then paired with zingy pickled carrot, fresh coriander and creamy mayonnaise for a juicy and flavour-packed burger.

  • Burger buns — preferably brioche
  • Mayonnaise

Method
 

  1. Place the brisket in a heavy-based pan and cook slowly on the stovetop until the meat becomes very tender and falls apart easily.
  2. Add honey and Sriracha to flavour the brisket.
  3. Continue cooking slowly until the brisket is tender and can be pulled apart.
  4. Prepare the pickled carrot shortly before serving.
  5. Mix or prepare the mayonnaise for serving.
  6. Warm the brioche buns or tortillas.
  7. Pull the tender brisket apart and assemble the burgers with the pickled carrot, mayonnaise and fresh coriander.
  8. Serve with potato wedges if desired.

Notes

The brisket can also be prepared in a slow cooker or oven. The original stovetop cooking caused the meat to catch slightly on the bottom, so using a lower, more controlled heat is recommended.
Brioche buns work particularly well, although warm tortillas can also be used. For entertaining, the burgers can be made into smaller versions using dinner rolls.
