Fruit Crumble

A simple and comforting fruit crumble made with fresh berries and fruit, topped with a buttery oat and nut crumble and served with ice cream or custard.

Ingredients
  

  • Fruit Filling
  • Mixed berries and fruit — as needed
  • Flour — 2 tablespoons
  • Caster sugar — 2 tablespoons
  • Crumble Topping
  • Rolled oats — 1 cup
  • Nuts roughly crushed — as desired
  • Brown sugar — ½ cup
  • Butter — 4 tablespoons
  • To Serve
  • Ice cream or custard

Equipment

  • Baking dish
  • Aluminium foil
  • Mixing bowl

Method
 

  1. Chop the berries and fruit into bite-sized pieces.
  2. Place the fruit into a baking dish.
  3. Toss the fruit with 2 tablespoons of flour and 2 tablespoons of caster sugar.
  4. Cover the baking dish tightly with foil.
  5. Bake at 180°C for approximately 25 minutes, or until the fruit has softened slightly and the juices begin to run.
  6. Meanwhile, combine 1 cup of oats, roughly crushed nuts, ½ cup brown sugar and 4 tablespoons of butter to make the crumble topping.
  7. Remove the foil and spread the crumble mixture evenly over the cooked fruit.
  8. Return the dish to the oven and bake until the topping has spread and browned.
  9. Serve warm with ice cream or custard.

Notes

This is a great way to use up older fruit and berries from the fridge. The choice of fruit and nuts can be changed according to what you have available.
